Wellness Month - Mindfulness Day One

This week we will be learning about mindfulness and the part it can play in keeping us feeling good and doing our best. Each day there will be a short video posted in the announcements. Take a few minutes and follow along and see what a great start it can be to your day.

video will not display in email - cilck here to view.

Thank you to Mrs. Easterday for all of her work in making these videos for our school!

What is Mindfulness?

Paying attention to the here and now - other people, the environment, a concern, or challenge - in a kind, nonjudgmental way. Each day this week we will learn about how our five senses help us be mindful, and practice a mindfulness activity.

Tuesday Sense: Hearing

Fact: The brain never stops working, even when people are asleep the ear continues to hear sounds, but the brain shuts them out.

Mindful Practice: Sit comfortably and close your eyes for 30 seconds, carefully listen to all the sounds you can hear in the classroom, the hallway, and elsewhere inside and outside of the school. What sounds did you hear? How did it feel to sit and listen quietly? Were you surprised by all of the sounds you heard? Those sounds are always there, but we have learned to tune them out when we are focused on our school work.

Jr. Band will be rehearsing after lunch today and Thursday.

Potato Pancake Recipe

On Unified Arts night, many parents and family members tried potato pancakes. Here is the recipe so you can make them at home:

Potato Pancakes**  (makes 12 pancakes)

3 cups of leftover mashed potatoes
1 eggs lightly beaten
1/2 cup of shredded cheese
3 Tablespoons of flour
2-3 Tablespoons of chopped scallions, onions or any fresh herb
note:  if you wish to use dried herbs, reduce amount by half.

Mix all ingredients together and form 3 Tablespoon sized rounds.  Place the rounds in a plate of flour and gently press with a floured hand to flatten.  Using a skillet or frying pan on medium heat, butter or lightly oil the pan and add the pancakes.  Flip after 2-3 minutes or when golden brown.
Pancakes can be served on a bed of greens, reheated as an after school snack, or as an addition to any meal.
**recipe adapted from Just a Taste Potato Pancake Recipe

The dressing we served with the pancakes on Unified Arts night was:
Homemade Buttermilk Ranch
1/2 cup mayonnaise*
1/4 cup sour cream*
1/2 cup chopped fresh dill
1/4 cup chopped fresh parsley
a little salt and pepper to taste
thin mixture with real buttermilk to desired consistency
mix well and refrigerate
*this recipe can be made with low fat/fat free options for heart health.
Yogurt may be substituted for the sour cream.
